- En una olla baja, ponemos un chorrito de AOVE a fuego fuerte y marcamos los dados de atún, reservamos.
- En la misma olla añadimos un chorro más de AOVE y ponemos los dientes de ajo picados y la cebolla en juliana a pochar a fuego suave durante aproximadamente 15-20 min
- Transcurrido el tiempo subimos el fuego a fuerte añadimos el vinagre y reducimos y hacemos lo mismo seguido con el vino. En unos 3 min tenemos reducido el alcohol.
- Apartamos del fuego, añadimos el pimentón y removemos para incorporar bien.
- Una vez tenemos todo, añadimos el atún, salpimentamos para rectificar y ponemos el agua o el caldo, cocinamos 3 min más a fuego medio y listo!
