  2. Pásalo a un cuenco, lo vamos a lavar con agua fría de 6 a 8 veces hasta que el agua salga limpia. Tenemos que frotar bien el arroz, no vale dejarlo en remojo.
  3. Cuando el agua esté transparente pasa el arroz a una olla y acomódalo con una pala de madera, y añádele el mismo agua que de arroz, en mi caso 350 ml de agua fría.
  4. Tapamos el arroz con una tapa y lo ponemos en el fuego, a fuego medio durante 2 minutos, cuando hayan pasado los 2 minutos bajamos el fuego al mínimo y lo dejamos durante 13 minutos. Pasados los 13 minutos apagamos el fuego y retiramos y dejamos reposar durante 10 minutos. Todo esto sin destaparlo, en todo momento tiene que estar tapado.
  5. Cuando esté el arroz ya cocinado y reposado, lo pasamos a un cuenco para añadir el aderezo, vinagre de arroz, azúcar y sal. Las medidas en mi caso son 50 de vinagre, 25 de azúcar y 5 de sal. Hay que utilizar en todo momento utensilios que no sean de metal ya que pueden cambiar el sabor.
  6. Cuando la mezcla ya esté y esté atemperada cubrimos con un paño húmedo, y lo dejamos reposar a temperatura ambiente, jamás meterlo en la nevera.
  7. El arroz os tiene que quedar pegasoso y brillante.
